what a beautiful boning knife... I can't wait to bring a rack of lamb and show off this knife at the table to my guests. Very very sharp and a nice balance. The highly polished handle will keep microbes at bay and it comes in a very elegant presentation box... almost a shame to put the knife in the rack with my other tools.... I will certainly take a peek at the chef and paring knife for my next "gift".
One of the best - but choosing a proper sharpener for it is tough - takes a bit of work to sort all that out but the blade once razor sharp is excellent
