I've owned many knives over the years, some better than other, but none of them ever really made me feel like I was wielding something that felt like it could cut through anything. That is until I had the opportunity to use a professional sashimi knife while doing some training. Now I own this knife, and I love it. Incredibly sharp, holds its edge, and slicing through fish, beef, or even vegetables is smooth and effortless. Since it is razor sharp, it is also important to remember to keep the edge pointed away from you at all times. I made the mistake of forgetting that, once, and now how a small scar on one of my fingers to show for it. Respect the knife. Get to know it. Don't take it for granted, or it can hurt you.

Just got my knife. Worth of the price. As a sushi chef I think it just little too heavy. But nice steel.
I use this knife to cut large pieces of meet. Pork Butt, Brisket, whole roast. Love it, super sharp so be careful or you will cut yourself.
